Carpaccio of prawns with pineapple flavouring

  • Dill
  • 2 limes
  • 1 tbsp olive oil
  • 1 cm fresh ginger
  • 1 tsp of Nuoc Màm sauce
  • 400g raw shrimp
  • Sweet and sour chilli sauce
  • 6 drops of pineapple flavouring


  1. Peel the shrimp, cut them in half lengthwise and remove the belly.
  2. Prepare a dressing of oil, Nuöc Màm, grated ginger, lemon juice and pineapple flavouring.
  3. Flatten the ½ prawns gently before lining them up on a soup plate and cover with a little of the dressing, leave to marinate for 20 mins.
  4. Sprinkle with dill or chervil and serve with a small ramekin of Sweet and Sour sauce or eat them plain.
