Crème brulée with Vanilla and Caramel Beurre Salé flavours

  • 45cl of milk
  • 6 egg yolks
  • 20cl of liquid cream
  • 150g white caster sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon vanilla flavouring
  • 9 drops of salted butter caramel flavouring


  1. Melt the sugar with a dash of water in a saucepan, without stirring, until coloured.
  2. Add the milk, cream and flavourings, stirring well.
  3. Heat the mixture over a low heat.
  4. Whisk the egg yolks in a bowl and gradually add the milk, mixing well.
  5. Pour the cream into ramekins.
  6. Place in the oven for 1 hour and 20 minutes, then leave to cool and place in the refrigerator for at least 3 hours.
  7. Sprinkle with brown sugar before serving to caramelise with a blowtorch.
