Green bean salad, purple onions, cherry flavoured balsamic dressing

  • Salt & pepper
  • 1 purple onion
  • A few cherries
  • 750g of green beans
  • 3 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • 5 drops of cherry flavouring


  1. Throw the beans into a pan of boiling salted water and cook for about 10 minutes.
  2. Check with a knife to see if they are cooked through, drain and then plunge into a tub of cold water with ice cubes to retain their colour.
  3. Mix the olive oil, vinegar, cherry and lemon flavouring in a bowl.
  4. Season with salt and pepper and place the cooled beans in a bowl.
  5. Add the chopped purple onion and the vinaigrette.
  6. Add a few cherries. Mix well and set aside in the refrigerator.
  7. Serve chilled.
