Tomato and watermelon salad with raspberry and white peach vinaigrette

For the salad :

  • 1/2 lemon
  • 50g feta cheese
  • salt & pepper
  • 1 red onion
  • 2 heirloom tomatoes
  • 200g watermelon tomatoes

For the vinaigrette :

  • Salt & pepper
  • 3 tablespoons of olive oil
  • 2-3 tablespoons raspberry vinegar
  • 5 drops of white peach flavouring
  • 1/2 tablespoon raspberry flavouring


For the salad :

  1. Cut the tomatoes and watermelon into cubes. Chop the red onion. Place everything in a salad bowl.
  2. Add the diced feta cheese.
  3. Season with salt and pepper.

For the vinaigrette:

  1. Mix the raspberry vinegar, olive oil, salt, pepper, white peach flavouring and raspberry flavouring with a fork or small whisk.
  2. Pour the dressing over the salad. Toss to combine.
