Chocolate mousse with Raspberry and Passion Fruit flavours

  • 3 eggs
  • 100g of chocolate
  • 5 drops of Raspberry flavouring
  • 10 drops of passion fruit flavouring


  1. Separate the egg whites from the yolks. Melt the chocolate in a double boiler.
  2. Mix the yolks and sugar in a bowl until the mixture turns white. Add the flavourings and then the chocolate a little at a time.
  3. Beat the egg whites until stiff.
  4. Gently add the egg whites to the mixture with a spatula.
  5. Pour into verrines. Chill for at least 2 hours. Grate some chocolate before eating.
